A yummy one!

I just tried this recipe the other evening, and it was YUMMY!

I got it from the Kraft Food and Family magazine.

The kids weren't thrilled about the veggies, but we made them eat some of each.

Saucy Stir-Fried Pork

Prep 15 min Total 25 min

2 C minute white rice, uncooked ( you can use brown rice instead, to add a little nutrition)
1/4 C Kraft Zesty Italian dressing
1 lb. pork tenderloin cut into thing strips ( I cut is smaller for the kids sake...I also just used thin cut lean generation pork chops, not tenderloin)
1 C thing red pepper strips ( about 1 medium)
2 C fresh sugar snap peas or snow peas
3/4 C diagonally sliced green onions
2 Tbsp. Soy sauce
1 tsp cornstarch
1/2 tsp ground ginger

Cook rice as directed on package.

Meanwhile, heat dressing in skillet on med-high heat. Add meat; cook and stir 2 minutes. Add peppers and peas; cook 3 minutes, stirring frequently. Add onions;cook and stir 1 minute.

Mix soy sauce, cornstarch and ginger until well blended. Add to meat mixture in skillet; cook1 min or until sauce thickens, stirring frequently. Serve over rice.

I though it had a wonderful flavor. I think I cooked mine longer than directions said and peas were a little too limp, but YUM YUM!! We all loved it.

The kids loved the flavor of the "chicken" and gobbled it up, and my kids don't really like meat.
