I came up with it all by myself;)

The other day I went to make a recipe that was grilled chicken with a fruit/veggie salsa. When I was looking for the recipe I could not find it and had never made it before, so had no idea where to start except for the fruits/veggies I bought to make the recipe with. I was WAY off, but it turned out WONDERFUL, so let me share!

Grilled Chicken and Summer Salsa

Marinate chicken breasts (4) in Italian dressing for a few hours or overnight.
Grill on grill.

Meanwhile
You will need pineapple tidbits (I prefer in 100% juice), red peppers, green peppers, and red onion.
(You can make the mix the way you prefer, heavy on the onions and pineapple for us).
Dice them all up. Pineapple does not need to be diced.

Place a small amount of pineapple juice in pan, place diced fruit/veggies in the pan and heat for awhile. Just to make the veggies soft, yet not too cooked.

Serve grilled chicken topped with Summer salsa!

You can add some kick by adding jalepenos!

Sorry no pictures, I couldn't find a recipe I was going to use therefore had to come up with my own Summer salsa on the fly!
We loved it and so did the kids.

::Thank You Kelloggs::

I was so excited to receive a box of goodies from Kellogg's a few weeks ago!

They sent me 2 boxes of Frosted Mini Wheats (which we usually buy anyway), and a cool cereal on the Go cup, which of course was fought over and used within minutes of opening up my box of goodies=)...by the kids of course.



I may have to buy another, if you are a mom, I am sure you agree that anything to make breakfast on those busy morning easier is worth it!!
Along with these goodies I got a fun recipe to try, it took me awhile to get to it, but me and E had so much fun this morning making Sassy Sun Pops...



He crushed up all the cereal all by himself in his PJ's may I add.

Check out Kellogg's Snacktivate website for some really fun and easy recipe ideas, I want to try a few for sure.
I love to bake and the kids love to help, so it is a win win situation, a bit messy but enjoyable.

Come back later and I will let you know how they taste, they are baking right now.
I made my sassy Sub pops, a bit different, less almonds so the kids wouldn't be intimidated, and I just made them cookies, not "lollipops", like suggested (and much cuter!)



I couldn't keep E away from the batter, so I guess they can't be too bad;)

Some Recipes

Here is my husbands favorite Fall/Winter Soup.

Sausage Bean Soup
(Not sure where I got this recipe...Taste of Home or Mr Food, maybe)

3/4 lb bulk Italian sausage
( I use the Bob Evans It sausage in the roll...but you can get it from the meat counter also)
1/2 C chopped onion
1 garlic clove minced
(I used Tastefully Simples Garlic Garlic...we love LOTS of garlic)
1 can (15 1/2 oz) butter beans, rinsed and drained
( I like the mini butter beans but they are hard to find)
1 can (15 oz) black beans, rinsed and drained
1 can (14 1/2 oz) diced tomatoes (seasoned ones taste good too),undrained
1-2 cans beef broth (depending on how much broth you like)
1 TBSP mined fresh basil or 1 tsp dried basil
2 TBSP shredded Parmesan cheese

In large saucepan cook sausage, onion and garlic until sausage is browned; drain. Add beans, tomatoes, broth and basil. Cover and simmer for 10 minutes.
Sprinkle each serving w/cheese.
**Tonight I added chopped fresh spinach for added nutrition...and because it was already out on the counter! We haven't tasted it yet, Josh isn't home yet. I am sure it is good though!
